cool light hours of the morning, 25% whole bunch and balance the whole berry with natural ferment for 12 days in the small open-top vat, basket pressed to and aged for 14 months in 25% new super fine French oak hogshead barrels with the balance to previous 1920 shiraz barrels and lees aging until bottling unfined and unfiltered.
