The Red Mill Original bottling is our ode to the history of both Red Mill and Sydney Harbour as a rum capital. Red Mill was originally distilled and aged in the CSR refinery on the foreshore of Sydney Harbour, in Pyrmont Bay. A classic style of rum, it was rich and flavoursome, aged in all ex-whiskey casks. When ready, it would be transported to George Fesq’s warehouse for bottling. We haven’t attempted to recreate this Rum, exactly, but have used it as a reference for the ongoing journey of Red Mill. This has the stronger, punchier flavours of white oak cask rums, but with the refinement and elegance of all of the Red Mill spirits.
