A blend of 80% Shiraz and 20% Cabernet Sauvignon. The fruit was harvested in the cool of the early morning to retain all the natural acidity. A portion of the Cabernet Sauvignon was aged in seasoned French oak barriques while a portion of the Shiraz was seasoned in French and American hogsheads and barriques each for around 12-13 months. Minimal winemaking intervention with the use of a uniquely designed gravity 'lift' tank. On the nose is an abundance of sweet plums, ripe blackberry and red currant with hints of jubes and red liquorice rounding out the palate. The palate is both generous and elegant with mouth filling sweet, Cabernet driven dark fruits, primarily blackberries, and a touch of white pepper that is expected from this Langhorne Creek single vineyard. The tannins are firm, with lovely natural acidity which balance well with the fruit sweetness.
