The juice was fermented using native yeasts in older french oak barrels (7+ years) to give funkiness, texture, and build complexity, without imparting oak character. As a young wine, this shows exotic melon and fig aromas, a light and taut palate, and a hint of texture to match with food. It will continue to improve over some years, gaining depth, complexity, and the typical Gruner-driven spice characters of white pepper, parsnip, and fresh herbs.
