The fruit for this wine will go through harvest during March. The grapes will then endure a long, cool fermentation in stainless steel vats & French oak barrels. The wine is left to mature in French oak for 12 months, where the team will batonage monthly. And they do this to add complexity, and enhance fruit and oak integration, prior to final blending and bottling.
