Selected from our organically certified pinot noir and gamay blocks from Balmoral at 900m, these grapes were hand-picked. Placed into half-tonne slotted bins, taken directly to the winery. These whole bunches were placed into open fermenters, and wild fermentation started while the grapes were fully intact. After 15 days, carbonic maceration was complete, and the fruit was gently pressed into stainless-steel tanks, where the lees were stirred for 4 months to increase mouthfeel. The wine was passed through a rock filter prior to bottling. Vegan.
