We test a variety of different types each year to evaluate how they perform in the amazing Barossa environment. Usually, these little portions are combined until we were able to sample the ancient and uncommon French variety Counoise, combined with the ancient Spanish variety Carignan, both sourced from a single vineyard. Together, we harvested these two types in the field, and then co-fermented them in an open fermenter. This wine, which screams for food and company and is vibrant, fresh, and light in style, is what happens when you push the envelope.
