The winemaking team from Nugan Estate do this to help preserve delicate fruit flavours and aromas of the juice. Afterwards, we clarify the juice before it goes through a slow, cool fermentation. We do this to ensure there is a combination of the residual sugars and to ensure a perfect balance of the acidity. They then leave the wine to stabilise, while we store it at cool temperatures to retain a natural spritz before bottling.
