This late ripening ancient Greek varietal now grown mainly in the Southern Italian regions of Basilicata and Campania has gained its reputation as 'the Barolo of the South'.
This wine encompasses simple wine making with open fermenters, wild yeast and 19 days on skins before basket pressing into older French oak for 18 months maturation before bottling.
"Paradox" is the best word to describe this wine. Bright and fragrant aromas don't quite prepare you for the decisive crunchy fine tannin that this variety delivers, combine this with the great natural acidity, another trait of this variety, gives elegant wine with some muscle. This wine owuld suit many foods, from red meat to hearty pasta or just a platter of your favourite cheese.
