1.6 tonne of fruit was harvested from Bernard Smart’s vineyard in Clarendon (planted in 1921), and 1.3 tonne of fruit came from the Wait family vineyard in Blewitt Springs (planted in 1942). The Smart fruit was crushed and destemmed while the Wait fruit was left with approximately 30% whole bunches. Ferments were handled gently with no additions, pressed to old large format oak up on completion of primary fermentation and left on fine lees for elevage.
The wines were not fined or filtered.
