The Bunnamagoo Merlot was made by Robert Black, using gentle winemaking techniques in order to preserve the ripe mid-palate and supple tannins that Merlot should typify. The fruit was harvested and fermented in small batches according to ripeness and flavour profile. The resulting blend shows rich layers of jammy plum and chocolate characters. Maturation in a mixture of new but predominately old French oak barriques over 12 months has softened the tannins and added hints of vanilla and toast to complete the finished wine. This wine can be enjoyed now but will continue to improve for years.
